Dom Perignon was a Benedictine monk frequently credited with the invention of Champagne (beverage)|Champagne. The famous brand of Champagne Dom Perignon (wine)|Dom Perignon is named after him.The quote that is attributed to him, "Come quickly, I am tasting the stars!" is supposedly what he said when tasting the first sparkling Champagne. Sadly, while the Dom did work tirelessly and successfully to improve the quality and renown of the still wines of Champagne, he did not invent sparkling wine, nor was he the first to make Champagne. In his era the fermentation|refermentation in bottle that gives sparkling wine its sparkle was an enormous problem for winemakers. When the weather cooled off in the fall, fermentation would sometimes stop before all the fermentable sugars had been converted to alcohol. If the wine was bottled in this state, it became a literal time bomb. When the weather warmed in the spring, dormant yeast roused themselves and began generating carbon dioxide t! hat would at best push the cork out of the bottle, and at worst explode, starting a chain reaction. Nearby bottles, also under pressure, would break from the shock of the first breakage, and so on, which was a hazard to employees and to that year's production. Dom Perignon thus tried to avoid refermentation. He did introduce some features that are hallmarks of Champagne today, particularly extensive blending from multiple vineyards. Prior to blending he would taste the grapes without knowing the source vineyard to avoid influencing his perceptions. References to his "blind tasting" have led to the common misconception that Dom Perignon was blind.

Hogshead


A hogshead is a large Barrel (storage)|cask of liquid (less often, of a List of traded commodities#Foodstuffs|food commodity). More specifically, it refers to a specified volume, measured in Imperial units, primarily applied to alcoholic beverages such as wine, ale, or cider. The ''Oxford English Dictionary'' (OED) notes that the hogshead was first standardized by an act of Parliament in 1423, though the standards continued to vary by locality and content. For example, the OED cites an 1897 edition of ''Whitaker's Almanack'', which specified the number of gallons of wine in a hogshead varying by type of wine: claret 46 gallons, Port wine|port 57, sherry 54; and Madeira wine|Madeira 46.Eventually, a hogshead of wine came to be 63 gallons, while a hogshead of beer or ale is 54 gallons.A hogshead was also used as unit of measurement for sugar in Louisiana for most of the 19th century. Plantations were listed in sugar schedules as having produced x number of hogsheads of suga! r or molasses.

Violets (genus ''Viola'') are flowers of the family Violaceae, with around 400 species throughout temperate areas of the world. Most violets are herbs found in moist and slightly shaded conditions such as hedgerows. Violets are small perennial plants often with large heart-shaped leaves, which flower profusely in spring. The genus includes the sweet violet|Sweet Violet (''Viola odorata'', the common violet of the English countryside) and Dog Violet, and many other species whose common name includes the word "violet". One quirk of the violet is its elusive scent — along with terpenes, a major component of the scent is a ketone compound called ionone, which temporarily desensitises the olfactory receptor neuron|receptors in the nose; sniff all you like, you won't get any more smell from the flower!In North America, there are several different species of wild violets. Some are blue, some are yellow, white, or cream; some are even bicolored. In addition, the shape of the petals defines more species; for example, some violets have a "spur" on the end of each petal.
